10 3/4 ounces cream of celery soup, condensed
1 cup 2% low-fat milk
1 tablespoon lime juice
1/8 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon paprika
1/2 pound shrimp
2 cups cooked rice
1 cup frozen peas -- thawed
1/4 cup grated Parmesan cheese
Recipe
Preheat oven to 350 degrees F. Spray a 1 1/2-quart casserole dish with
nonstick cooking spray.
Cook soup, milk, lime juice, and seasoning, stirring until well
blended. In a 1 1/2-quart casserole dish, pour half of the soup
mixture, then add alternate layers of shrimp, rice and peas. Add the
remaining soup. Sprinkle with Parmesan cheese. Bake, covered, for 20
to 25 minutes. Serves 4.
