1 cup granulated sugar
1/3 cup strong coffee
1/8 tsp cream of tartar
1 egg white
Recipe
Boil sugar, coffee and cream of tartar to the soft ball stage - 237F. Beat egg - white until stiff and slowly add the hot syrup, beating continuously with rotary beater. Continue beating until icing is thick enough to stand up in peaks and then spread on cake.
