1 cup granulated sugar
1/3 cup water
1/8 tsp cream of tarter
1 egg white
Recipe
Boil sugar, water and cream of tarter to the soft ball stage - 237F. Beat egg - white until stiff and slowly add the hot syrup, beating continuously with rotary beater. Continue beating until icing is thick enough to stand up in peaks and then spread on cake.
CARMEL MOUNTAIN CREAM ICING
Make Mountain Cream Icing, carmelizing 1/2 the sugar before boiling the syrup.
