Whipped Cream Frosting

1 Tbs cold water
1/2 tsp unflavored gelatin
1 cup whipping cream
2 Tbs sugar

1 COMBINE cold water and gelatin in a 1-cup glass measuring cup. Place cup in a saucepan of boiling water. Cook and stir about 1 minute or till gelatin is completely dissolved. Beat whipping cream and sugar in a mixing bowl with an electric mixer on medium speed while gradually drizzling gelatin over cream mixture. Continue beating till stiff peaks form.
2 Notes: Gelatin stabilizes the whipped cream so it holds its shape.
