Basic Flour Tortillas

2 c. sifted flour
1/2 tsp. baking powder
(optional)
1 tsp. salt
1/4 c. lard or shortening
1/2 c. warm water
Recipe
Mix the sifted dry ingredients. (If you hope to make
large tortillas omit the baking powder, which will keep them
from stretching.) Work in the lard or shortening and mix well.
Now add the water and knead until the dough is springy. Divide
the dough into egg-sized balls and place them on a piece of wax
paper covered by a clean cloth for 15 to 30 minutes. Using a
rolling pin roll the dough balls into thin circles to 8-inches
across on a lightly floured board. Bake on a hot ungreased
griddle until speckled with brown. Flip and cook the other
side. The tortillas may puff up while it bakes. If so press
down lightly with a pad or a tea towel. As they are finished,
place the hot tortillas between the folds of a tea towel until
serving time. To store them place in a plastic bag in the
refrigerator. Makes about 1 dozen large tortillas.
