Beef: MultiPurpose Hamburg Mix

List of Ingredients
4 onions, chopped
1 tsp. garlic salt
2 c. chopped celery and tops
1/4 c. drippings
4 lb. hamburger
2 tsp. salt
1/2 tsp. pepper
3 Tbsp. Worcestershire sauce
Recipe
Saute onions, celery and tops in drippings until soft
(without browning). Add hamburger and cook, stirring until
crumbly and lightly browned. Add remainder of ingredients
and
simmer 20 minutes. Skim off excess fat. (To freeze: Cool
quickly. Fill 5 (16 ounce) containers. Seal and label.) This
mix can be used to make:
Sloppy Joes: Thaw mix, then heat. Spoon over split
toasted hamburger buns or onion rolls. (Rolls can be stuffed
with thawed mix, wrapped individually in foil and heated on
a
grill for 30 minutes, turning once.)
Chili Con Carne: Heat mix with an equal amount of
canned red kidney beans. Season with chili powder. If
desired,
top each serving with a slice of cheese.
Spaghetti: Heat mix. Serve on hot cooked spaghetti;
top with cheese.
Rice: Heat 1 pint mix. Add 2 cups cooked rice, 1 can
whole kernel corn and 1/4 teaspoon thyme. Simmer to blend
flavors. Serves 4 to 6 persons.
Stuffed Green Peppers: Use rice casserole mixture to
stuff 8 preboiled green peppers. Bake at 375 degrees for
about 50
minutes. (Top with catsup, tomato sauce or soup or cheese
sauce
before baking.)
Pizza: Soften 1 package of cake yeast in 3/4 cup
lukewarm water. Stir into 2 1/2 cups biscuit mix. Knead 20
times on floured Tupperware pastry sheet and divide into 4
equal parts. Roll into 10 inch circles. Place on ungreased
baking sheets or pizza pans. Turn 1/2 inch edge. Spread with
2
cups tomato sauce and 1 cup mix. Sprinkle with garlic salt
and
oregano. Add other toppings as desired. Bake at 425 degrees
for
15 to
20 minutes. Makes 4 or more servings.
Company Casserole: Thaw 2 pints mix in refrigerator.
Mix 1 cup cottage cheese with 8 ounce package cream cheese
and
1/4 cup dairy sour cream. Cook noodles (8 ounces). In but-
tered casserole, place half of the noodles. Cover with half
of
mix; spread cheese mixture over meat and repeat. Bake at 350
degrees
for 30 to 40 minutes. Makes 6 servings.
Tamale Pie: In a 2 quart casserole combine 1 pint
thawed mix, 1 cup cream-style canned corn, 1 chopped green
pepper, 1 teaspoon chili powder, 1 1/2 cups canned tomatoes
and
1 cup pitted ripe olives. Stir in 1/2 cup cornmeal with 1
cup
milk. Blend into meat mixture. Bake at 375 degrees for 1
hour.
Makes
6 servings.
