Bread: Double Chocolate Chip Bread

4 cups all-purpose flour, sifted
3/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup Dutch cocoa
1/2 cup solid shortening, melted
2 large eggs
2 cups buttermilk
2 teaspoons pure vanilla extract
1-1/2 cups semi-sweet chocolate chips
Recipe
Preheat oven to 350 degrees F. Sift together flour, baking powder,
cinnamon, sugar and salt. Beat eggs. Add buttermilk, vanilla and melted
shortening to the egg mixture. Combine with dry ingredients and using a
spatula, mix until thoroughly blended. Stir in chocolate chips.
Spray two loaf pans with cooking spray. Divide mixture between the two
pans. Bake in a 350 degrees F oven for 45-50 mins. Yields 2 loaves.
