Bread: Honey Wheat Bread

3 1/2 cups flour (up to 4)
2 1/2 cups whole wheat flour
2 packages dry yeast
1 tablespoon salt
1 whole egg
1 cup milk
1 cup water
1/2 cup honey
5 tablespoons shortening
2 tablespoons brown sugar
Recipe
Preheat oven to 375º. In large bowl, combine 2 cups flour and 1 cup whole
wheat flour, yeast, and salt; mix well. In saucepan, heat milk, water,
honey, brown sugar, and shortening until warm (120º to 130º). Shortening
does not need to melt. Add liquid to flour mixture. Add egg. Blend at
low speed for 3 minutes. By hand, gradually stir in remaining wheat and
regular flour to make a firm dough. Knead for 5 minutes. Place in greased
bowl, cover, and let rise for 1 hour. Punch down, divide, and shape dough
into desired loaf. Let rise in warm place for about 45 minutes. Bake in a
375º oven until golden brown for about 55 minutes.
