Bread: Hot Roll Mix

16 c. flour
3 Tbsp. salt
2 c. dry milk
1 1/2 c. shortening
1/2 c. sugar

To Make Into Dough:
4 c. roll mix
1 c. warm water
1 egg, beaten
1 oz. compressed yeast or 1
pkg. dry yeast
4 Tbsp. sugar (optional)
To make dry mix: Cut shortening into dry ingredients,
until it resembles coarse meal. Store in cool place. If
sweeter mix is desired, add 1/2 cup more sugar to mix. It
will
depend on your use. If it is to be used for dinner rolls, it
is fine as is.
To prepare dough: Dissolve yeast in warm water, add
beaten egg. Then beat in 4 cups of the dry mix and stir
well.
Let dough rise until doubled. Shape into rolls, donuts,
kolaches, coffeecakes, etc. One batch will make 3 dozen
kolaches, 2 dozen dinner rolls, or 1 large coffeecake. You
can
use this mix in any recipe that calls for a hot roll mix,
such
as Pillsbury. For a larger batch, double the ingredients.
This can also be made into a rye roll mix. Substitute 6 cups
rye flour in the dry mix mixture. (Ten cups white and six
cups
rye.)
