    Cake: Butterscotch Chip Filling

    List of Ingredients




    1 1/2 c. sugar
    1/2 c. cream
    1/2 c. water
    1 Tbsp. butter
    1 c. pecans
    1 Tbsp. cornstarch
    1/3 c. butterscotch chips
    1 egg yolk, beaten
    1 c. coconut

    Recipe



    Combine sugar and cornstarch. Stir in cream, water,
    chips and egg yolk. Stir constantly over medium heat until
    thick. Take from heat and add coconut and nuts; let cool
    before spreading on cake.

    Fluffy Frosting:
    2 egg whites
    1 c. dark syrup
    pinch of salt
    1 tsp. vanilla
    Combine the egg whites with syrup and salt in top of
    double boiler. Beat with electric mixer until well beaten.
    Place over rapidly boiling water and beat for 7 to 10
    minutes
    or until frosting stands in stiff peaks. Remove from heat
    and
    add vanilla. Beat 2 minutes longer.
