Casserole: Chicken Broccoli Rice Skillet

List of Ingredients
2 Tbsp butter
1 lb skinless, boneless chicken breasts, cut into thin strips
2 C frozen broccoli cuts
3/4 C sliced carrots
1 can cream of broccoli
1 C milk
1/8 tsp pepper
1 1/4 C uncooked minute rice
Recipe
Brown chicken in skillet with melted butter. Remove chicken
from skillet and add broccoli and carrots. Cook until
tender-crisp. Stir in soup, milk and pepper. Return chicken to
skillet. Heat to boiling. Reduce heat to low. Cover and cook
10 minutes or until chicken is no longer pinck, stirring
occasionally. Stir in rice. Cover; remover from heat. Let
stand 5 minutes. Fluff with fork. (4 servings)
