    List of Ingredients




    1 1/2 c. sugar
    3 Tbsp. cornstarch
    3 Tbsp. plain flour
    1/4 tsp. salt
    3 beaten egg yolks
    1 1/2 c. water
    3 beaten egg whites
    grated rind of 1 lemon
    2 Tbsp. butter or margarine
    1/3 c. lemon juice
    6 Tbsp. sugar

    Recipe



    In saucepan combine sugar, cornstarch, flour and salt.
    Gradually add water. Bring to a boil, stirring constantly.
    Cook and stir over medium heat for 7 minutes. Remove from
    stove. Stir 1/2 cup of hot mixture into beaten egg yolks.
    Return to hot mixture. Bring to a boil and cook on low heat
    for 4 minutes more, stirring constantly. Remove from heat
    and
    add lemon peel and margarine. Gradually stir in lemon juice.

    Cool mixture while you whip egg whites. Beat egg whites
    until
    soft peaks form. Gradually add the sugar. Slowly add the
    cooled lemon mixture into the egg whites and fold in gently.

    (You can use lemon pudding from a mix and fold it into the
    beaten egg whites, but the cooked pudding is best.)
