    Beef: Meatloaf

    List of Ingredients

    1 lb. ground beef or turkey
    1 1/2 cups bread crumbs
    1 diced onion
    1 egg
    1/4 cup catsup
    3 Tbs. mustard
    1 Tbs. prepared horseradish
    salt and pepper to taste (about 1 tsp. and 1/4 tsp. respectively to start with)


    Recipe

    Mix together. (I use that old Kitchen Aid mixer here too but you can do it by hand or with a wooden spoon.) Put in a loaf pan. Bake at 350 degrees for 45-60 minutes.

    Variations I've picked up over the years:


    1 lb. ground beef or turkey
    1 1/2 cups bread crumbs
    1 diced onion
    1 egg
    3/8 cup milk
    1 Tbs. Worcestershire sauce
    1 tsp. dry mustard
    salt and pepper to taste OR


    1 lb. ground beef or turkey
    2/3 cup cracker crumbs
    1 diced onion
    2 eggs
    3/4 cup milk
    3/4 tsp. poultry seasoning mix or sage
    salt and pepper to taste

    Meatloaves can be frozen, either raw (as long as the meat was not previously frozen) or baked. You can also bake them in muffin tins for variety.
