Meatless: Mexican Casserole

1/2 cup chopped onion
2 tablespoons butter
8 ounces tomato sauce
4 ounces diced green chilies
1/2 teaspoon celery salt
1/4 teaspoon pepper
2 eggs
1 cup half and half
6 corn tortillas
3/4 pound Monterey jack cheese -- shredded
8 ounces sour cream
4 ounces cheddar cheese -- shredded
Recipe
Saute onion in butter until onion is transparent. Add tomato sauce, chilies, celery salt, and pepper. Simmer for 5 minutes. Beat eggs and combine with half and half. Stir into tomato mixture.
Quarter tortillas and layer one-third of the tortillas, one-third of the tomato mixture, and one-third of the Jack cheese in a 4-quart casserole. Repeat three times.
Carefully frost with sour cream and sprinkle with cheddar cheese. Bake at 350 for 35-45 minutes.
