    Potatoes: French Fries

    2 large russet potatoes
    1 48 oz. can shortening (or use oil)
    salt

    Recipe



    Slice potatoes into 1/4 inch square strips. Rinse fries in a
    large bowl filled with cold water. The water should become
    milky. Dump out and add more water to cover plus ice. Let sit
    for one hour. Heat shortening or oil in fryer (...wok or
    whatever you have that is big enough) to 375 degrees. Remove
    fries to a towel to dry for 10-15 minutes. Split up fries and
    add to oil for 1 1/2 minutes at a time. Don't let them begin to
    brown. Remove to paper towel to drain and cool. When all are
    cooked, drained, and cooled, put in a resealable bag and freeze
    4-5 hours. Reheat oil and add 1/2 fries at a time. Fry 4 1/2 -
    6 minutes or until golden brown. Drain on paper towel and salt
    generously. Cook and drain second batch in same manner.
