    Poultry: Cheap Chicken Parmesan

    Source of Recipe

    Frugal Friends in the Kitchen

    List of Ingredients

    1) 1 lb package thin spaghetti noodles (.79 cents)
    (1) 3 lb bag of boneless chicken thighs (less than $5)
    (1) or (2) jars or cans of spaghetti sauce (we use 2 as my husband is a big eater)($2 - $4)
    (1) lb mozzarrella cheese ($2.50)
    parmesan cheese

    Recipe

Cook spaghetti. Drain. In a skillet pour 1-2 Tb olive oil. Cook one chicken thigh per family member. Shred about half of the mozzarrella cheese while chicken is cooking. When chicken is done, add the spaghetti sauce to the skillet. Stir until all is heated. Run hot water over the spaghetti that is still in the collander to reheat. Place noodles on plate, followed by spaghetti sauce with one thigh per person. Put mozzarrella cheese on top followed by a sprinkling of parmesan. We love this with a slice of garlic Texas toast and a side salad or french style green beans.
