Poultry: Creamed Chicken with Biscuits

Biscuits:
2 C flour
1 Tbsp baking powder
1 tsp salt
2/3 C milk
1/3 C vegetable oil
Creamed Chicken:
1/4 C chopped onion
1/4 C butter/margarine
1/4 C flour
1/4-1/2 tsp salt
1/8 tsp pepper
2 C milk or broth
2 C chopped, cooked chicken
Recipe
Combine flour, baking powder, salt; add milk and oil. Stir
until dough forms a ball. Knead 10 times. Roll or pat into 6
inch square about 1-inch thick. Cut into six rectangles. Place
on lightly greased pan. Bake at 450 degrees for 10-12 minutes.
In a skillet saute onions in butter until tender. Stir in
flour, salt and pepper until smooth. Add milk, bring to a boil.
Reduce heat and stir for 1-2 minutes until thick. Stir in
chicken and parsley; heat. To serve, split biscuit in half.
Put some creamed chicken over top of bottom half. Top with top
of biscuit and more creamed chicken. (6 servings)
I always double the biscuit portion of this recipe. My girls
love biscuits and love to eat them without the chicken over top.
I usually saute mushrooms along with the onions.
