Poultry: Easy Chicken Stir Fry

List of Ingredients
* 4 oz. broccoli
* 4 oz. baby sweetcorn
* 4 skinless, boneless chicken breasts
* 1 in piece root giner
* Bunch of spring onions
* 2 carrots
* 3 tablespoons olive oil
* For the sauce:
* 1/4 pint chicken stock
* 1 tablespoon soft dark brown sugar
* 1 tablespoon cornstarch
* 1 tablespoon soy sauce
Recipe
Bring a wok or pan of water to the boil. Cut broccoli into florets. Blanch the broccoli and sweetcorn in the water for 2 minutes. Drain well.
Cut the chicken into large pieces. Peel the ginger and cut into thin matchsticks. Trim and diagonally slice the spring onions. Peel the carrots and chop into matchsticks.
Wipe the wok with kitchen paper and heat the oil until almost smoking. Add the chicken and stir fry for 7-8 minutes or until golden. Transfer to a plate and keep warm.
Stir fry the ginger, spring onions and carrots for 2 minutes. Stir in the broccoli and swttcorn and cook for 1 minute. Whisk together the sauce ingredients until smooth and well blended. Add to the pan along with the chicken. Bring to the boil and simmer for a further 2 minutes or until heated thorough.
Accompany with some boiled vermicelli noodles and a leafy green salad.
