Poultry: Fast Chicken

1/4 cup vegetable oil
2 tablespoons lemon juice
1 cup grated Parmesan cheese
1/2 cup biscuit baking mix
1/4 teaspoon pepper
3 whole chicken breasts -- split skinned boned & flattened
2 tablespoons margarine -- or butter
Recipe
In a small bowl, mix the oil and lemon juice. In a shallow bowl, mix
the cheese, biscuit mix, and pepper. Dip the chicken in the oil
mixture, then coat with the cheese mixture. In a large skillet, heat the
margarine over medium heat until hot. Saute the chicken until
golden and done, about 3 to 5 minutes on each side.
NOTE: How about serving it with Russian dressing or sauteed mush-
room'! You can use turkey cutlets instead of chicken breasts --
they're even "faster" 'cause they don't have to be flattened.
