Seafood: Baked Fish and Rice

List of Ingredients
1 1/2 C boiling chicken broth
1/2 C uncooked long grain rice
1/4 tsp Italian seasoning
1/4 tsp garlic powder
10 oz. frozen chopped broccoli, thawed and drained
1 Tbsp grated Parmesan
2.8 oz can french-fried onions
1 lb. fish fillets
Paprika
1/2 C shredded cheddar
Recipe
In greased 11x7x2 inch baking dish, combine broth, rice, Italian
seasoning and garlic powder. Cover and bake at 375 degrees for
10 minutes. Add broccoli, Parmesan, and half of onions. Top
with fish fillets; sprinkle with paprika. Cover and bake 20-25
minutes longer or until fish flakes easily with fork. Uncover;
sprinkle with shredded cheddar and remaining onions. Return to
over for 3 minutes or until cheese is melted.
