1 1/2 pounds carrots
1 tablespoon extra-virgin olive oil
salt and pepper -- to taste
1 tablespoon honey
Recipe
Peel carrots and cut into uniform 1-1 1/2" pieces. Toss with olive
oil,salt, and pepper. Place in an ovenproof casserole and drizzle with
honey. Add a splash of water. Cover with foil and bake at 350°F. until
tender, about 30-45 minutes. Remove foil and bake 5-10 more minutes
until carrots are glazed.
