Christmas: Apple Pie Jam-Christmas Cheer

24 firm apples (I use early McIntosh) medium sized, cored, peeled and
sliced thin (I use that doodad from pampered chef, it is FABULOUS!)
2C sweet cider

Boil apples in cider, stirring occasionally until apples are tender
(about 45 minutes) then, with a hand mixer, blend apples until they are
chunky applesauce consistency.
add 3.5 cups of Brown sugar, and 1 cup of white sugar, 1 Tablespoon
pumpkin pie spice, and a half teaspoon of orange rind.
Boil mixture until it rounds up on a teaspoon, stirring to prevent
sticking.
When it reaches a good consistency, ladel into sterilized jars and
process in a boiling water canner for 10 minutes (add 5 minutes for
higher than 1000 feet of altitude)
approx 3 3/4 pints
