Halloween: Orange and Chocolate Cookies

1 pkg sugar cookie mix -- (17.5 oz)
1/2 cup butter or margarine -- melted
1 egg
1/2 tsp orange extract
4 drops red food coloring
8 drops yellow food coloring
CREME FILLING
6 Tbsp butter or margarine -- softened
1/2 tsp flavoring (if specified)
1 1/2 cups powdered sugar
1 Tbsp half-and-half or milk (to 1 1/2)
3 TBSP cocoa powder
Recipe
In medium bowl, blend sugar cookie mix with butter, extract food coloring
and egg.
Mix well.
Preheat oven to 375. Roll dough into balls 1 inch in diameter. (Be sure and
make each ball the same size, so that your cookies will be even when you
put them together. Also be sure that you make an even amount of cookies, so
that you'll have complete sandwiches.)
Place 2 inches apart on ungreased cookie sheet. Bake for 8 to 10 minutes
Try not to let the edges brown; if they do, reduce the baking time
slightly.
Let cookies cool on cookie sheet for 1 minute, then transfer to cooling
rack. When cool, place approximately 1 tsp filling in center back of one
cookie. Place another cookie on top (flat side over filling), and using
even pressure, press down in the middle of the top cookie to force the
filling outward to cookie edges.
CREME FILLING:
In medium bowl, cream butter and half of powdered sugar.
Add 1 tbsp milk and beat well.
Add remaining powdered sugar, cocoa and enough milk to make filling easy to
work with, but not too thin.
VARIATION
You can also make the reverse of the cookies above by making
the cookies chocolate and the filling orange. Add 2 TBSP cocoa powder to
the sugar cookie mix, before adding the butter and egg.
To make orange-colored filling, add 2 drops of red food coloring and 4
drops of yellow. If desired, add 1/4 tsp orange extract to flavor the
filling.
