Basic Cornmeal Mix
4 cups yellow cornmeal
4 cups all purpose flour
1/2 cup sugar
1/4 cup baking powder
2 tsp. salt
1 cup shortening
Mix dry ingredients in a 4 qt. bowl. Cut in shortening until mixture resembles fine crumbs. Cover, label and store in airtight container at room temp no longer than 3 months. Use basic cornmeal mix in cornbread, hushpuppies or corndogs.

Corn Bread
2 1/3 cups basic cornmeal mix
1 cup milk
1 egg
Heat oven to 450. Mix all ingredients (batter will be lumpy). Pour into greased baking pan. Bake until golden brown. 9-12 servings
I make mine in an iron skillet cause we like it crispy.
Hush Puppies
Vegetable oil
2 1/2 cups basic cornmeal mix
1 1/4 cups milk
1 egg
2 TBS finely chopped onion
3/4 tsp. cayenne pepper (optional)
diced bell pepper (optional)
Heat oil (1 inch) to 375. Mix remaining ingredients. Drop by teaspoonfuls into hot oil. Fry till golden brown, about 2 minutes. Drain on paper towels.
Corn Dogs
1 pound frankfurters
vegetable oil
1 cup basic cornmeal mix
1/2 cup milk
1 egg
Dry frankfurters with paper towels. Heat oil (2 inches) to 365. Mix cornmeal mix, milk and egg. Dip frankfurters into batter, allowing excess batter to drip into bowl. Fry, turning once till brown, about 4 minutes; drain on paper towels. Insert wooden skewers in end of each if desired.
