    Fresh Strawberry Ice Cream

    1 pint fresh strawberries, hulled and chopped
    1 Tbs fresh lemon juice
    2 eggs
    1 c sugar, divided (I used organic)
    2 c heavy whipping cream
    1 c milk
    1 tsp vanilla extract

    Recipe



    Combine strawberries, lemon juice, and 1/4 cup sugar in a mixing bowl, set aside in fridge for 1 hour or more.

    In small mixing bowl beat eggs.

    In saucepan, heat milk and 3/4 c. sugar on medium. Stirring until milk warms and bubbles start to develop around edges.

    Add a couple of tablespoons of warm milk to eggs stirring. Continue to add up to a cup of the milk slowly. Pour all back into pan and heat again until bubbles start to form on outside over medium/low heat. Take off heat. Add vanilla.

    Pour into medium mixing bowl. Add strawberries with juice and mix well. Gently stir in whipping cream just until combined. Chill in fridge.

    Pour into ice cream maker and follow manufacturer's instructions.
