Beer Short Ribs

5 lbs shortribs
1 can of beer (12 oz.)
1 envelope of Lipton Onion Soup Mix
1 large onion chopped
salt pepper
olive oil
4 large potatoes peeled, cut in lg chunks
1 lb carrots peeled, cut in lg chunks
Recipe
Oven 300 degrees preheat .
Place large oven proof soup pot on medium heat. Put about 2 tablespoons
olive oil in pot. Brown shortribs. Turn heat down.
Put beer, soup mix, onion, salt to taste, pepper to taste, and enough water
to almost cover ribs. Place in oven. Cook till ribs are tender. About 6
hours.
Don't let liquid cook away. Add water or another can of beer or both as
needed.
Add the potatoes and carrots the last 2 hours of cooking time.
You can adjust the amounts of ribs and vegtables to meet the number you are
serving. Make sure you add another envelope of soup mix, another can of
beer, and onion if you add more meat and vegtables.
