Flat Cheese Enchiladas

1/4 cup salad oil
12 corn tortillas
1 large can enchilada sauce
1 lb. ground beef, cooked
1 small onion, minced
2 cups Monterey jack cheese, grated
Recipe
Heat oil in skillet and soften tortillas one at a time. Drain each tortilla
as you remove it from the skillet. Put some enchilada sauce in a large dish,
then take a softened tortilla and place it into the sauce. Add ground beef,
then onion and cheese. Repeat until you use up all ingredients, stacking
tortillas. Cut into 4 or 6 parts, heat at 375° for 5 minutes to melt cheese.
