2 eggs
1/2 cup chicken broth
1/4 cup bread crumbs
2 garlic cloves, minced
2 Tablespoons minced parsley
2 teaspoons salt
1 teaspoon tarragon
1 teaspoon dry mustard
1/4 teaspoon pepper
2 pounds lean ground beef
1/2 cup chopped green onions
1 Tablespoon butter
1 cup shredded Swiss cheese
2 ounces chopped smoked ham
2 Tablespoons minced parsley
Recipe
Beat the eggs in a mixing bowl until blended. Add the broth,
bread crumbs, garlic, 2 Tablespoons parsley, salt, tarragon, dry
mustard
and pepper. Beat until mixed. Mix in the ground beef. Sauté the
green
onions in the butter in a skillet until tender. Combine the green
onions, cheese, ham and 2 Tablespoons parsley in a bowl.
Divide the ground beef mixture into 2 equal portions. Pat 1
portion of the ground beef mixture into a loaf pan. Top with the
cheese
mixture. Pat the remaining ground beef mixture over the cheese
mixture.
Bake at 350 degrees for 45 minutes; drain. Bake for 30 minutes
longer. Let stand in the pan for 15 minutes. Serve hot or at room
temperature. SERVES: 8
