Applesauce Oatmeal Muffins

1 1/2 cups quick-cooking rolled oats
1 1/2 cups flour
1/2 cup packed brown sugar
3/4 teaspoon McCormick® Ground Cinnamon -- or Apple Pie Spice
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup applesauce
1/2 cup milk
1/4 cup vegetable oil
1 egg
Oatmeal Topping -- (see recipe below)
Recipe
Preheat oven to 400°F. Grease 12 muffin cups; set aside. In medium bowl
stir together oatmeal, flour, sugar, cinnamon, baking powder and baking
soda. In another bowl combine applesauce, milk, oil and egg; add to flour
mixture. Stir just until moistened. Spoon batter into muffin cups, filling
each 3/4 full. Sprinkle each with Oatmeal Topping. Bake for 20 to 25
minutes or until a toothpick inserted in center comes out clean.
Oatmeal Topping: Stir together 1/4 cup quick-cooking rolled oats, 1
tablespoon packed brown sugar, 1 tablespoon melted butter and 1/8 teaspoon
McCormick® Ground Cinnamon until crumbly.
