Pumpkin Apple Muffins w/Streusel Topping

For the muffins:
2 1/2 cups flour
2 teaspoons cinnamon
1/2 teaspoon grated nutmeg
2 teaspoons baking powder
Dash salt
2 eggs, beaten
1 cup canned pumpkin puree
13/4 cups sugar
1/2 cup vegetable oil
2 cups diced, peeled Granny Smith, Braeburn or Golden Delicious apples
For the topping:
2 tablespoons flour
1/4 cup brown sugar
1/2 teaspoon cinnamon
Dash of nutmeg
4 tablespoons softened butter
Recipe
Preheat oven to 350 degrees. Oil 16 to 18 muffin cups or line with
paper liners. In a large bowl, stir together flour, cinnamon, nutmeg,
baking powder and salt. In another bowl beat eggs. Stir in thoroughly
pumpkin, sugar and oil. Use the back of a spoon to make a well in the
flour mixture. Pour in the egg mixture, stirring just until the flour
has been incorporated. Do not over-mix. Stir in the apples.
. Spoon mixture into muffin cups, filling half to two-thirds full. Make
streusel topping by stirring all ingredients together in a small bowl.
Sprinkle mixture lightly on top of the muffins.
. Bake 25 to 35 minutes, or until a wooden pick comes out clean when
inserted in the center.
(Makes 16 to 18 muffins)
