> 1 cup canned pumpkin
> 2 eggs
> 1 cup firmly packed brown sugar
> 1/4 cup vegetable oil
> 3 cups baking mix (Jiffy baking mix or Bisquick)
> 1 tsp. pumpkin pie spice
> 1 cup chocolate chips
> 3/4 cup chopped nuts, toasted

Preheat oven to 400. Line a muffin pan with paper muffin cups
> (or just spray muffin pan is not using muffin cups ). In a large
> bowl, combine pumpkin, eggs, brown sugar, and oil. Add baking mix
> and spice; beat just until blended. Stir in chocolate chips and
> nuts. Fill muffin tins about two-thirds full. Bake 14-18 minutes
> until golden brown or until a toothpick inserted in center of muffin
> comes out clean. Serve warm or cool on a wire rack. Store in an
> airtight contained.
> YIELD: about 1-1/2 dozen muffins.
