List of Ingredients
2 cups onion -- chopped
2 cups carrots -- shredded
2 cups zucchini -- shredded
2 garlic doves -- minced
1 cup fresh bread crumbs
4 tablespoons skim milk
1 pound extra-lean ground beef
2 eggs -- slightly beaten
2 tablespoons parsley
1/2 teaspoon salt
2 teaspoons pepper
1 teaspoon thyme
1/2 teaspoon sage
Recipe
ADVANCE PREP:
Chop onions. Shred carrots and zucchini. Mince garlic. Prepare soft
bread crumbs.
PREPARATION:
Spray medium skillet with cooking spray. Heat and add onions. Cook
over medium-high heat, stirring frequently until golden brown. Add
carrot, zucchini and garlic, stirring constantly until vegetables are
softened. Remove from heat. Set aside. In small bowl, combine bread
crumbs and milk. Let stand five minutes. In large bowl, combine beef,
eggs, parsley, salt, pepper, thyme, sage, cooled vegetables and soaked
bread crumbs. Shape into loaf. Place into center ; 13x9x2-inch baking
dish. Bake 1 hour and 15 minutes. Remove from oven. Cool. Wrap, label
and freeze. Serves 8.
TO SERVE:
Either thaw and reheat in microwave or thaw and bake at 350 degrees
for 3: minutes or until heated through.
