Beef: Beef Stew over Biscuits

4 c. left over roast beef or stewing beef
1 1/2 c. chopped onion
2 c. tomato juice
3 T. quick-cooking tapioca
2 c. beef broth
1 t. garlic
1 T. parsley flakes
2 1/2 t. salt
1/2 t. pepper
1 bay leaf
6 med. carrots, diced
3 med. potatoes, quartered
1/2 c. diced celery
Recipe
Add all ingredients and cook until vegetables are tender. Serve
over biscuits.
