1/4 cup butter
5 pounds lean beef -- boneless
3 medium sliced onions -- `
3/4 cup flour
3 cups water -- approximate
2 1/2 teaspoons salt
4 teaspoons beef bouillon granules
1/2 teaspoon pepper
1 bay leaf
1 tablespoon brown sauce for gravy
Recipe
In a heavy large skillet, melt butter over medium high heat. Add beef
cubes. Stirring occasionally, cook until lightly browned. Drain as
drippings collect; reserve drippings. Add onions to browned beef
cubes. Stirring occasionally, cook until onions are soft and golden,
10 to 15 minutes. Sprinkle flour over beef mixture. Stir gently until
flour i absorbed, about 11 minute. Add water to drippings to make 4
cups liquid. Stir liquid mixture, salt, bouillon granules or cubes,
pepper, bay leaf and brown sauce for gravy into beef mixture. Bring
mixture to a boil, stirring occasionally to loosen drippings in pan.
Cover; cook over low heat about 2 hours longer until beef is tender.
Remove from heat. Cool on a rack. Ladle into four 2-cup containers
with tight-fitting lids. Leave 1/2-inch headspace at top. Attach lids.
Label with date and contents. Freeze.Use within 6 months. Makes 4
packages or about 8 cups Cubed Beef Mix.
