    Sides: Make-Ahead Cheese-Baked Potatoes

    Serving: Serves: 12 Cook Time: 30 minutes Total Time: 2 hours

    List of Ingredients

    7 baking potatoes
    milk, as needed
    2 tablespoons finely chopped onion
    2 tablespoons butter
    Salt and pepper, to taste
    mild cheddar cheese, shredded, as needed
    paprika, as needed

    Recipe

    Bake potatoes for 1 hour at 425 degrees F or until tender. Cool. Cut in
    halves. Scrape pulp from shells and mash. Add a little milk to make a
    light and fluffy mixture.

    Cook onion in butter. Stir into potato mixture along with salt and
    pepper. Pile mixture into 12 of the potato shells and discard the
    remaining two shells.

    Sprinkle grated cheese and paprika to cover the tops of the stuffed
    potatoes. Place stuffed potatoes in flat freezing container or pan.
    Cover tightly and freeze.

    To serve, place frozen potatoes on baking sheet. Bake at 450 degrees F
    for 25 minutes. These will freeze up to a week before you serve them.
