Pasta: Three Cheese Stuffed Pasta Shells

List of Ingredients
12 jumbo pasta shells
1 beaten egg
1-12 oz container low fat cottage cheese, drained
1/2 C shredded mozzarella
1/4 C shredded parmesan
2 Tbs snipped fresh parsley (I use dehydrated)
1/2 tsp dried oregano, crushed
1- 14 1/2 oz can Italian style stewed tomatoes, cut up
1- 8 oz can tomato sauce
Snipped Fresh parsley (optional)
Recipe
Cook pasta shells per package instructions. Cool on a piece of greased foil.
Meanwhile, stir together egg, cheeses, parsley, and oregano. Spoon a scant 1/4C of filling into each cooked shell. Arrange filled shells in a 2- quart square baking dish.
Combine undrained tomatoes and tomato sauce; pour over shells in baking dish. Bake, covered in a 350 degree oven for 15 minutes. Uncover and bake 10 to 15 minutes more or till heated through. Sprinkle with additional snipped parsley. Makes 4 main dish servings.
