Garlic Buttered Spaghetti

3 quarts water
1 t. salt
1 T. oil, optional
6 oz. spaghetti, linguine or vermicelli
1/3 cup sliced green onions
1 to 2 cloves garlic, minced
3 T. margarine
1/4 cup finely snipped parsley
1/4 t. salt

Recipe
In large kettle, bring water and salt to boil. If desired, add oil to help keep pasta separated; when water boils, add spaghetti, linguine or vermicelli, a little at a time so that the water doesn't stop boiling. Hold the pasta at one end and dip the other end into the water. As the pasta softens, gently curl it around the pan until pasta is completely immersed. Reduce heat slightly. Continue to boil uncovered for 9 to 12 minutes or until past is tender but still slightly firm. Stir occasionally to prevent sticking. Taste often to test for doneness. Immediately drain pasta in colander. Don't rinse. transfer the hot pasta to a heated serving dish. meanwhile, in small skillet, cook green onion and garlic in hot butter or margarine until tender but not brown. Stir in parsley, salt and pepper. Pour green onion mixture over the pasta and toss gently until pasta is well coated. Serve at once. Herbed Buttered Spaghetti: Prepare garlic buttered spaghetti as above, except stir in 1 !
T. vinegar and 3/4 t. dried basil, marjoram or oregano, crushed with the parsley, salt and pepper. Serves 6
