Homemade Noodles

2 C. All-purpose flour
4 eggs
2 teap. salt
Water as needed to make a dough
Recipe
Measure flour into bowl; make a well in the center and add the eggs and
salt. With you hand, thoroughly mix the eggs into the flour. Add water, 1 T.
at a time, mixing thoroughly after each addition and adding only enough
water to form dough into a ball. Knead until smooth and then rest for 10
minutes.
Divide into balls and roll out on a pasta machine until paper thin. Dry
until won't stick when cut and cut on the pasta machine. Spread out on clean
newspapers and let set out until completely dry. Store in zip-lock plastic
bags in the freezer. Will keep for months.
If you don't have a pasta machine, roll out the dough with a rolling pin
until paper thin and then cut the noodles with a knife. Use these in any
recipe calling for noodles.
My husband used to make up 2 dozen eggs at a time, and package them in quart
zip-lock bags, which made 10 - 12 bags.
