    Orzo Pilaf with Mushrooms

    1 tbsp. olive oil
    1 tbsp. butter
    1 small onion, chopped
    4 ounces mushrooms, sliced
    2 cups chicken broth
    1 cup orzo
    3 tbsp. pine nuts, toasted
    2 tbsp. minced fresh parsley
    Salt and pepper to taste

    Recipe



    1. Heat oil and butter in large, heavy saucepan over medium heat. Add onion and mushrooms and sauté until soft and tender, about 7 minutes. Add broth and bring to a boil. Stir in orzo and return to boil. Cover and reduce heat to medium-low. Simmer until orzo is tender and has absorbed all liquid, stirring occasionally, about 15 minutes. Remove from heat. Stir in pine nuts, parsley and salt and pepper to taste. Serve immediately. Yield: 4 servings.
