    2 T. margarine
    1 medium onion, finely chopped (1/2 cup)
    1 clove garlic, minced
    1 cup raw long grain rice
    2 large ripe tomatoes, peeled, seeded and chopped
    1 can chicken broth (13.75 oz) OR 2 cups vegetable broth
    1 t. salt
    1/4 t. pepper
    1/2 t. oregano, crumbled

    Recipe



    In medium ovenproof casserole, melt butter and sauté onion until tender, but not browned. Add garlic and rice and cook, stirring 5 minutes over low heat. Preheat oven to 375. Add tomato, broth, salt, pepper and oregano and bring to boil; cover and bake at 375 for 25 minutes or until rice has absorbed the liquid. Serves 4
