    Breaded Honey Mustard Pork

    2 tablespoons of honey mustard
    l egg
    l/2 c. plain bread crumbs
    l/2 tsp. garlic-pepper blend
    l/4 tsp. salt
    l lb. of pork tenderloin, cut crosswise into 8 pieces
    l to 2 tablespoons oil

    Recipe



    l. In shallow bowl, combine mustard and egg;beat well. In another
    shallow bowl, combine bread crumbs, garlic-pepper blend and salt; mix
    well.

    2. Place l pork piece between 2 pieces of plastic wrap or waxed
    paper. Working from center, gently pound pork with flat side of meat
    mallet or rolling pin until about l/4 inch thick; remove wrap.
    Repeat with remaining pork pieces.

    3. Heat oil in large nonstick skillet over medium high heat until
    hot. Coat each pork piece with mustard mixture, then crumbs. Place
    in skillet. Cook 6 to 8 minutes or until browned on both sides and
    no longer pink in center, turning once.
