    List of Ingredients




    1/4 cup honey
    2 tablespoons lemon juice
    2 teaspoons Dijon mustard
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1/8 teaspoon dried thyme
    2 cups coarsely shredded green cabbage
    1/2 cup shredded carrots
    2 (1/2-inch thick) boneless loin pork chops
    1 pound unpeeled red potato, quartered
    Paprika

    Recipe



    Preheat oven to 400°F. In small bowl, whisk honey, lemon juice,
    Dijon mustard, salt, pepper and thyme until well-mixed. In 9-inch
    pie plate or 8x8-inch baking dish, combine cabbage and carrots.
    Drizzle half of honey mixture over cabbage mixture. Toss to mix.
    Spread evenly in bottom of dish. Place pork chops on top. Spread
    remaining honey mixture over pork chops. Arrange potatoes around
    pork chops. Sprinkle potatoes generously with paprika to taste.
    Cover with foil. Bake for 30 to 45 minutes. Serves 2.
