Garlic Pork Roast

3 1/2 pounds pork loin -- boneless
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon pepper
1 onion -- sliced
3 cloves garlic -- peeled
1 cup chicken broth -- or water
Recipe
Trim excess fat from roast. Heat oil in skillet over medium-high heat.
Cook pork in oil about 10 minutes, turning, until brown on all sides.
Sprinke with salt and pepper.
Place onion and garlic in slow cooker. Add pork. Pour broth over pork.
Cover and cook on low heat 8-10 hours, until pork is tender. Reserve 1
cup cooking liquid.
Serve one-third of roast with baked sweet potatoes and steamed broccoli.
Shred remaining roast with two forks and place 2 cups shredded pork in
two freezer containers. Add 1/2 cup reserved broth to each container.
Label and freeze. Thaw in refrigerator for 8 hours before using for
taco, enchilada and burrito fillings, or in Weeknight Pork Stew or Spicy
Pork Chili.
