    Ham and Cheddar Cups

    List of Ingredients




    2 C flour
    1/4 C sugar
    2 tsp baking powder
    1 tsp salt
    1/4 tsp pepper
    6 eggs
    1 C milk
    1/2 lb ham, cubed
    1/2 C shredded cheddar
    1/2 lb bacon, cooked and crumbled
    1 small onion, chopped

    Recipe



    Combine flour, sugar, baking powder, salt and pepper. Beat eggs
    and milk; stir into dry ingredients. Stir in ham, cheese,
    bacon, and onion. Fill well-greased muffin cups 3/4 full. Bake
    at 350 degrees for 45 minutes or until toothpick inserted near
    center comes out clean. Cool for 10 minutes before removing to
    a wire rack. (20 cups)

    I always make these the day before and then I just zap them in
    the microwave to heat in the morning.
