    Pork Loin to Perfection

    3 to 4 lb. pork loin rib roast
    2 to 3 cans cream of mushroom
    soup
    1/2 c. water
    whole small onion
    1/2 tsp. salt
    6 medium carrots, cut in
    2-inch pieces
    4 medium potatoes, cut in half
    2 Tbsp. shortening
    1 medium bay leaf
    1 Tbsp. paprika
    dash of pepper

    Recipe



    In a large heavy pan, brown meat in shortening; pour off
    fat. Add soup, water, onions and seasoning. Cover; cook over
    low heat 1 hour and 15 minutes. Stir occasionally. Add
    carrots and potatoes. Cook 1 hour more or until done. Remove
    bay leaf. Thicken sauce, if desired. Makes 4 to 6 servings.
