2 c. leftover ham
1 lg. green pepper
1 (16 oz.) pkg. spaghetti
4 med. eggs
4 t. grated Parmesan cheese
Recipe
Cut ham into 1" cubes and cut pepper into sm. pieces.
Simmer ham and green pepper in 1/2 c. water in heavy
skillet for 5 min. Cook spaghetti in boiling salted water
to the al dente stage (about 7 min.). Drop 3 or 4 ice
cubes into water to prevent further cooking. Drain. Pour
spaghetti over ham and pepper in skillet and stir gently.
Turn burner to med. heat. Beat eggs. Pour beaten eggs
over mixture and cook until eggs are set (about 2 to 3
min.) Sprinkle each serving with 1 t. grated Parmesan
cheese. Makes 4 servings.
