    Buttermilk Whipped Potatoes

    8 thin-skinned new potatoes
    Water to cover
    2 Tbs butter
    1/2 cup buttermilk
    1/4 cup heavy cream

    Recipe



    Scrub the potatoes and cut in quarters. Cover with cold water and boil until just tender, 20-30 minutes. Drain thoroughly. In a mixing bowl or in the pot, mash the potatoes with the butter. With an electric beater whip the potatoes and buttermilk, gradually adding a little cream until smooth. Serve hot with chopped chives sprinkled on top.
