List of Ingredients
6 medium potatoes, scrubbed
1/4 cup vegetable oil
Salt and pepper
3 green onions, thinly sliced (green tops included)
1 tbsp. chopped fresh parsley
Recipe
1. Cut potatoes in small chunks. Heat oil in large skillet or electric skillet over medium-high heat (375�). Add potatoes to skillet; sprinkle with salt and pepper to taste. Cook, stirring occasionally, until potatoes are almost tender. Add onions and parsley to skillet. Continue cooking until potatoes are nicely browned and tender. Re-season with salt and pepper to taste, if desired. Yield: 4 servings.
