Garlic Herbed Mashed Potatoes

List of Ingredients
3 medium potatoes, peeled and cubed
1 cup chicken broth (no fat chicken broth can be used)
2 tablespoons olive oil
1 tbsp dried thyme
2 tsp dried basil
1/2 tsp dried rosemary, crushed (optional)
1 tbsp minced garlic
salt and pepper to taste
Recipe
Boil the cubed potatoes in water for about 20 minutes or until soft. Drain and add the broth and
olive oil. Mash the mixture with a potato masher or forks until well blended together or until
desired consistency.
Add the herbs and garlic to the mixture and stir until well blended. Season with salt and pepper.
Serve.
