Garlic Mashed Potatoes

1 large head of garlic, split in half horizontally
1 teaspoon olive oil
3 large baking potatoes, peeled & quartered
3 tablespoons of butter or margarine
1 cup of milk
salt to taste
1/4 teaspoon of ground white pepper
Recipe
Preheat oven to 350°. Drizzle the garlic with oil and wrap
securely in aluminum foil. Roast the garlic for 30 to 40
minutes, in the preheated oven or until soft. Allow the
garlic to cool then squeeze garlic out of skins. Discard
the skins and refrigerate the garlic.
Cover the potatoes with water, add the salt and bring to a
boil. Cover and cook for 20 to 30 minutes, or until the
potatoes are tender and drain. Mash the potatoes well and
add the garlic, margarine or butter, salt, pepper and milk.
Whip the potatoes, adding milk as needed until the potatoes
are light and fluffy.
